Maybe Monday

My mighty struggle with the family bug was mercifully brief. I pretty much told God that I couldn't get sick and He, obviously feeling magnanimous, went ahead and handled that for me!

As you very likely know - yesterday was Super Bowl XLII. The comeback kings Giants vs. the unbeaten Patriots. NY won! NY won, yee-haw! If you are at all interested in a run-down of this spectacular game ... in my own humble opinion, the Best Super Bowl Ever!!! ... check this out, an article by Barry Wilner, an Associated Press sportswriter (via Yahoo! news).

Because of the aforementioned family bug, we canceled the "big bash" (hah! we forgot to invite anyone!) we'd been planning and sat down with Chili Cheese Fries to cheer on my hometown's team, (DH is Cali born & bred, and an ardent Raiders fan, so he was just cheering for the underdog). Though it was just the two of us, our buddy Meg and our rambunctious little ones we really had a great time. And the food was delish! Want the recipe?

"Super" Chili Cheese Fries

1.5 pounds lean ground beef
.5 tsp onion powder
1 tsp ground cumin
.5 tsp chili powder
.5 tsp paprika
.5 tsp cayenne pepper (optional)
.25 cup diced yellow onion
2 tbs minced garlic
1 14oz can diced tomatoes, italian style (undrained)
1 14oz can light red kidney beans (undrained)
1 14oz can Hunts chili sauce
1 tbs tomato paste
1 pound bag frozen french fries

Using a large sauce pot, brown ground beef. Stir in spices. When fragrant, add onion, and then garlic - be sure to allow plenty of time for onions to sweat, becoming soft. Stir in tomatoes, beans, sauce and paste. Bring to a boil, stirring frequently. Cover, lower heat and allow to simmer, stirring occasionally for at least thirty minutes. (The longer it simmers, the better it tastes!)
Cook fries according to directions (and preference - I bake them, but you may prefer to fry, after all, it's a special occasion!)

Ladle chili over fries and top with shredded cheddar, sour cream, olives, green onions, hot sauce - Whatever! These are so, so, so tasty, but I have to warn you, they are not particularly diet friendly. You could try ground turkey instead of beef, and a baked potato instead of fries, low fat sour cream and cheddar cheese, anything your family prefers is fine.
